Sweet Potato Pie Cornbread
Ingredients
1 stick melted butter
1 cup squeezed canned sweet potatoes
1/2 cup granulated sugar
1 large egg
2/3 cup milk
1 cup flour
1/2 cup cornmeal
1 tbsp cinnamon
1/4 cup oil
Instructions
1. Preheat oven to 400 degrees F
2. Measure 1 cup of canned sweet potato. Strain excess water with cheese cloth or paper towels
3. To a bowl add melted butter, sugar, oil, egg, strained sweet potato, and milk. Mix with large whisk until batter is well combined.
4. To the mixture add flour, cornmeal, and cinnamon. Mix until batter is smooth.
5. Bake cornbread at 400 degrees for 30-35 minutes or until inserted toothpick comes out clean.
